Are there any kaitenzushi places near you?
I believe this is one of the original Genroku joints in Tokyo:
They used to advertise “the sushi that goes around” — it’s called “conveyor belt sushi”, but that name isn’t quite as cool sounding. Many shops make the conveyor into something amusing, such as one shop I’ve seen that has JR trains with little trays that deliver sushi.
Basically, you grab anything you want off the conveyor, and you’re charged by the colour of the plate or bowl. Anything bespoke comes with a specially coloured bowl or plate, so you can order anything you want, but you can get anything that’s already made by taking it as it comes by.
I’ve seen these shops more commonly on the West Coast of the US, but it’s still a nifty idea anywhere …
