I have a really stupid question. This appetizer you can see on the photo here is called “Florida Alligator Bites.” And it tastes quite good, too. But it can’t be made of actual alligator, right? The meat is very tender and light-colored.
Does anybody know what the alligator is made of?

It really is alligator meat. I have had it a couple of times. I confess that I do not really like it.

A restaurant in Washington, D.C. served alligator on occasion and a friend and I had some years ago. His comment was that it tasted sort of like chicken, but with a prehistoric taste. As I recall, it was tender and pretty good. Yes, I know, alligators and crocodiles are a bit different but both are reptiles and the similarities probably carry over into their meat.

Alligator (and that is actual alligator, yes!) is really good. I also love conch fritters, which are, well, fried conchs. (If you’ve never heard of eating conch, and I don’t mean to be condescending at all but plenty of people haven’t, they’re kind of like escargot only fried and done with spices. Which makes sense because they are sea snails.) I’m waving at you from the opposite coast of Florida! If you take I-4 allllll the way across the middle of the state from Tampa, I’m at the other end near Daytona where you were originally considering. (Shhhh, don’t tell anyone, but I think you made a better choice!)

I actually considered ordering conch fritters today but didn’t dare. π Thank you for telling me they are good. I love escargot, so I will be ordering them next time.

Yes, I have always found conch to be delicious! Since i no longer eat wheat, I would have to make sure that the fritters were made with some other grain, such as corn.
