As soon as Klara adds a new dish to the very limited repertoire of what she eats, she immediately drops something off the list. It’s like there’s a certain number of slots and new ones can’t be added.
I was so happy when all of a sudden she started eating pelmeni. Pelmeni are a godsend. She hasn’t eaten anything in the pelmeni family since a short-lived interest in ravioli when she was 3,5.
And then I discovered that pelmeni have displaced a previously deeply loved Mac and cheese. And I need her to like Mac and cheese because that was one of the only two typical American foods on her menu. She doesn’t eat burgers, tacos, chips or fries of any kind. She eats cheese pizza but that’s it.
I can’t complain because she eats borscht and soup any time of day, and fresh vegetables are always a hit. But nobody can cook borscht every two days. One needs easy solutions.

Hey, I took a day off work today to stay home and make borscht. And turkey cutlets. Nobody should question my devotion to borscht.

But I make a hardcore Peruvian chupe de mariscos.

You don’t have to cook it mexican. Here in the south it’s just called hominy. It’s one of those sort of bland comfort-food type things that my kids like. I put them in soup.

I lurve hominy, but it’s one of those things (like fresh corn tortillas) that’s just not available anywhere in Europe… It might be possible in Spain or Portugal though I never saw it in stores there…. maybe on a US military base but I don’t have any contacts now….

…IIRC there was a Peruvian version made with choclo– they were huge. But I don’t know what they called it. Wish I could get those here!
Would love a good chupe da mariscos too… or for that matter, some seco de res, cabrito, anticuchos, or heck even tacu tacu or salchipapas. Best we can do around here is a place that does creditable pollo a la brasa and so-so lomo saltado. Sigh. (/nostalgia)

Does she eat rice? Hot dogs? Hot dogs are as American as they come. Doesn’t have to be hot dogs all the time, either. Italian sausages or kielbasa would be an easy dinner as well. I would serve hot dogs with peas or broccoli and fries (if she doesn’t eat them, a differenr kind of potato she likes) or baked potato. Kielbasa you can roast with all sorts of veg. Italian sausage and roasted potatoes is an excellent combo. Serve with a bitter green like broccoli rabe and rice. It’s a favorite for my family, although I do have to cut the rabe very finely to make it palatable for my younger kids.
