To offset my Christmas turkey disaster, I cooked an amazing duck cassoulet today. I can’t eat it because it’s not diabetic-friendly but judging by my husband’s reaction, my cooking skills are back.
I’m going to do a kick-ass New Year’s table because I’m so embarrassed about my Christmas fiasco. Negative motivation is everything.
Have you used a CGM (Continuous Glucose Monitor)? Sounds like something that you’d like, given how data-oriented you are about your life. My brother used it for a couple of months. This is not the permanent one that you install for life. It’s the temporary one that you stick on your arm, which lasts around two weeks. Anyway, he’s gotten a lot of valuable information about his body now that he knows exactly what kind of food will result in what kind of glucose response, at what time of the day, and so on. A couple of months is all he needed and it has helped him tremendously in making the right food choices. No more guessing!

How do you make cassoulet without onions? Every recipe I’ve seen calls for one to three…. or should I just shut up?
