Pico de gallo

Do you, folks, like pico de gallo? I’m completely addicted. It’s like I could eat nothing but fresh pico de gallo forever. 

And it’s very easy to make. I use one of those mechanical Cuisinart choppers where you tug on a string and the device chops everything. Tomato, white onion, fresh cilantro, and a jalapeño pepper.

Hmmm, if I take the cilantro out (I have that genetic mutation that makes cilantro taste like soap – cheap Fa soap from the 90’s to be more precise – and I’m sure that’s not the flavour the dish should have) I’m left with one of the local salads, sans cucumbers. It’s a delicious salad, though, so I see your point.

    How does cilantro taste to the people to whom it doesn’t taste like soap, by the way?


    1. How often have you tried, I have a friend who just about spit out cilantro the first time he had it (exactly you’re reactions… soap!) but after a few times grew to love it.

      My first reaction to cilantro was …. weird! but I like it!

      I had a similar reaction to fish sauce, the first time I had at (at the home of an Asian colleague) it took every bit of willpower I had not to spit it out or throw up. Now I love it (in the right dishes of course).

          It’s used all over Southeast Asia (and maybe more widely)*. It really is one of those things that’s an acquired taste if you encounter it as an adult. The first time I had it it was just dripped over some tofu and I took a bite that had too much on it.

          *and something very much like it was a staple in ancient Rome


        1. “I’m fine with parsley though, so I might end up using that.”

          I’ve never much like the taste of parsely (too… dense and kind of bitter) maybe fresh basil instead of cilantro? It has the kind of freshness that parsley lacks.

          Or fresh mint?


  2. I love pico de gallo and I love cilantro. Cilantro tastes like the pure embodiment of freshness, and even more so when the flavor of fresh cilantro is combined with fresh lime.
